Store them in water in the fridge until RIGHT before the ceremony (and place them back in water between pictures and ceremony as well as have a vase for them to sit in during the reception prior to the toss). Have a nice thirsty towel handy to drip them onto prior to use.
Just an FYI, cut flowers will usually stand going without water for an hour or two without problems…depends upon how delicate the flowers are though (roses last better than peonies for example).
